What went wrong with my oysters? How do I get the breading to stick?

Use a deep fryer AND and use an oil made to fry with, such as peanut oil. A deep fryer will get the oil at the proper temperature and not allow the oysters to touch bottom as they will using a frying pan method. If you do stick with the pan method, make sure you are using the proper oil and allow the oil to become hot enough to cook the oysters without making them stick. Also, I would double or even triple dunk the oysters in egg and flour so they will have a nice thick breading.
